This Week’s Menu: Election Day!

It’s FINALLY Election Day – don’t forget to vote! I can’t ever remember being so glad to have an election season end, but am looking forward to seeing how it all turns out. Brett and I are heading out in a short while to pick up fried chicken at Pono Market in Kapaa, then we’ll head over to the local elementary school to cast our votes.

With YaYu working at the polls until they close here (7:00 p.m. HST), and just the three of us at home this year, we’re having a more ‘traditional’ dinner menu versus the usual assortment of party foods we’ve previously enjoyed while we watched the returns roll in. Actually, there’s a good chance that the winners will have already been decided by the time voting is finished in Hawai’i. National election coverage begins here at 2:00 in the afternoon!

Otherwise, work continues this week on getting the freezer emptied. Keeping a freezer here is important as bulk buying is a key step in keeping food costs down. I don’t think though that we’ve really adjusted to going from four to three family members. We’re buying less, but the freezer still seems to stays full, probably because it’s taking us longer to eat what we buy.

Anyway, this week we’re having:

  • Tuesday (this evening): Slow cooker macaroni & cheese, Pono Market fried chicken; fresh vegetables with ranch dip; petite creme puffs (a little of everything but the chicken for me).
  • Wednesday: Open-faced hamburger sandwiches; pickled beets; fresh vegetables with dip (toasted cheese sandwich for me)
  • Thursday: Grilled teriyaki chicken thighs (chilled tofu for me); zaru soba; cucumbers
  • Friday: Butternut squash ravioli with Alfredo sauce; steamed artichokes; garlic bread
  • Saturday: Leftovers
  • Sunday: Grilled hot dogs (vegan for me); vegetarian chili; carrot sticks
  • Monday: Beef & vegetable curry; steamed rice (no beef in my curry)

Several more things will leave the freezer this week, but as I thought, it’s going to take a while. I’m going to try visiting the farmers’ market again this week and see how it goes – we’ll be getting cucumbers, bananas, limes and whatever else looks good!

  1. Seeing the picture of Pono Market made me immediately want their amazing pork lau lau! Oh, I really miss that! I never tried their fried chicken because I was too focused on the lau lau, but next time…

    I agree about the election. I just want it to be over!

    1. ALL the food in Pono Market looks so good! I ended up buying some sushi and smoked ahi for me to have instead of the chicken. I will have to give their lau lau a try one of these days (if I ever go back to eating meat).

  2. Laura, I have always enjoyed reading your vlog so much! I originally started following you because I too am trying to find a way to move to Kauai. You have provided so much good information both in the moving process but also in your saving plans. I think you would do such a good job if you ever wrote a book about saving and planning, and travel. Would you ever be interested in doing something like that?
